Method

1. Make the Sauce

Combine the sesame paste, soy sauce, black vinegar, chili oil, sugar, and Sichuan peppercorn powder in a serving bowl. Gradually whisk in the warm noodle water until the mixture becomes smooth and pourable.

2. Prepare the Pork Mixture

Heat the vegetable oil in a skillet over medium heat. Add the minced garlic and ground pork, cooking until the meat is browned. Stir in the soy sauce, Shaoxing wine, sugar, and chili bean paste, then continue cooking for 3 to 5 minutes until fragrant and slightly caramelized. Remove from the heat and set aside.

3. Cook the Noodles

Boil the noodles according to their type:

  • Fresh noodles: 2–3 minutes
  • Dried noodles: 5–8 minutes

Reserve about ½ cup of the cooking water before draining. Toss the noodles with a small amount of oil if needed to keep them from sticking together.

4. Build the Bowls

To assemble each serving:

  • Spoon the sauce into the bottom of the bowl.
  • Add the freshly cooked noodles.
  • Top with the seasoned pork mixture.

The heat from the noodles helps loosen and combine the sauce for maximum flavor.

5. Garnish and Serve

Finish with chopped scallions, crushed peanuts, and pickled mustard greens if desired. Stir everything together thoroughly before eating to coat every noodle in the spicy, savory sauce.
