This No Bake Pecan Pie Balls recipe is a quick and irresistible treat—sweet, nutty pecan pie filling rolled into bite-sized balls and dipped in smooth chocolate. All the rich flavors of pecan pie without the oven—perfect for holidays, parties, or gifting!

Ingredients

  • 1 ½ cups finely chopped pecans toasted for best flavor
  • ¾ cup graham cracker crumbs about 6 full sheets
  • ½ cup brown sugar packed
  • ¼ cup pure maple syrup or light corn syrup for a classic taste
  • 2 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon salt
  • 8 ounces semi-sweet chocolate or milk chocolate, for coating
  • 1 teaspoon coconut oil or shortening optional, for smoother chocolate

Instructions

  • Toast the pecans (optional but recommended):
  • Place chopped pecans in a dry skillet over medium heat. Stir for 3–4 minutes until fragrant. Let cool completely.
  • Mix the base:
  • In a large mixing bowl, combine the toasted pecans, graham cracker crumbs, brown sugar, cinnamon, and salt. Stir to blend.
  • Add the wet ingredients:
  • Pour in melted butter, maple syrup, and vanilla extract. Mix well until the texture resembles a thick, sticky dough that holds together when pressed.
  • Shape the balls:
  • Scoop about 1 tablespoon of the mixture and roll between your palms to form small, even balls. Place them on a parchment-lined tray.
  • Chill to firm up:
  • Refrigerate the pecan balls for at least 45–60 minutes, or until they’re firm enough to handle.
  • Prepare the chocolate coating:
  • In a microwave-safe bowl, melt the chocolate and coconut oil in 30-second intervals, stirring between each, until smooth.
  • Dip and coat:
  • Using a fork, dip each chilled pecan ball into the melted chocolate, letting excess drip off. Place them back on the parchment.
  • Set and store:
  • Let the chocolate harden at room temperature or refrigerate for 15–20 minutes until set.
