Ingredients
- 1 lb 450g lump crab meat, drained and picked clean of shells
- ½ cup mayonnaise
- 1 large egg lightly beaten
- 1 ½ teaspoons Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Old Bay seasoning or your favorite seafood seasoning
- 1 tablespoon lemon juice fresh
- 1 tablespoon fresh parsley chopped
- ½ cup breadcrumbs plain or panko, for binding
- 1 tablespoon butter for frying
- 1 tablespoon olive oil for frying
- Optional for serving
- Lemon wedges
- Tartar sauce or spicy aioli

Prepare the mixture:

In a large bowl, whisk together the mayonnaise, egg, Dijon mustard, Worcestershire sauce, Old Bay seasoning, and lemon juice until smooth.

Gently fold in the lump crab meat and parsley. Be careful not to break up the chunks too much — you want nice, flaky pieces.
