Coleslaw Copycat

There are few side dishes as iconic as the creamy, tangy, and slightly sweet coleslaw that comes alongside a bucket of crispy fried chicken at KFC. For many of us, it’s the cool, crunchy balance to the hot and savory chicken—a dish that feels just as essential as the main attraction.

Ingredients

  • 1 medium head green cabbage finely shredded (about 6 cups)
  • 1 medium carrot peeled and grated
  • 2 tbsp onion very finely minced
  • 1/2 cup mayonnaise
  • 1/4 cup buttermilk
  • 1/4 cup whole milk
  • 2 tbsp lemon juice fresh preferred
  • 2 tbsp apple cider vinegar or white vinegar
  • 1/3 cup granulated sugar
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper

Instructions

  • Prepare the veggies:
  • Finely shred the cabbage (knife, food processor, or mandoline). Place in a large mixing bowl with grated carrot and minced onion.
  • Make the dressing:
  • In a separate bowl, whisk together mayonnaise, buttermilk, milk, lemon juice, vinegar, sugar, salt, and pepper until smooth and creamy.
  • Combine:
  • Pour the dressing over the cabbage mixture. Stir well until all vegetables are coated evenly.
  • Chill:
  • Cover and refrigerate for at least 2 hours (or overnight) for best flavor and texture.
  • Serve:
  • Stir before serving. Great alongside fried chicken, barbecue, or burgers.
