This No Bake Pecan Pie Balls recipe is a quick and irresistible treat—sweet, nutty pecan pie filling rolled into bite-sized balls and dipped in smooth chocolate. All the rich flavors of pecan pie without the oven—perfect for holidays, parties, or gifting!
Ingredients
- 1 ½ cups finely chopped pecans toasted for best flavor
- ¾ cup graham cracker crumbs about 6 full sheets
- ½ cup brown sugar packed
- ¼ cup pure maple syrup or light corn syrup for a classic taste
- 2 tablespoons unsalted butter melted
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ⅛ teaspoon salt
- 8 ounces semi-sweet chocolate or milk chocolate, for coating
- 1 teaspoon coconut oil or shortening optional, for smoother chocolate
Instructions
-
Toast the pecans (optional but recommended):
-
Place chopped pecans in a dry skillet over medium heat. Stir for 3–4 minutes until fragrant. Let cool completely.
-
Mix the base:
-
In a large mixing bowl, combine the toasted pecans, graham cracker crumbs, brown sugar, cinnamon, and salt. Stir to blend.
-
Add the wet ingredients:
-
Pour in melted butter, maple syrup, and vanilla extract. Mix well until the texture resembles a thick, sticky dough that holds together when pressed.
-
Shape the balls:
-
Scoop about 1 tablespoon of the mixture and roll between your palms to form small, even balls. Place them on a parchment-lined tray.
-
Chill to firm up:
-
Refrigerate the pecan balls for at least 45–60 minutes, or until they’re firm enough to handle.
-
Prepare the chocolate coating:
-
In a microwave-safe bowl, melt the chocolate and coconut oil in 30-second intervals, stirring between each, until smooth.
-
Dip and coat:
-
Using a fork, dip each chilled pecan ball into the melted chocolate, letting excess drip off. Place them back on the parchment.
-
Set and store:
-
Let the chocolate harden at room temperature or refrigerate for 15–20 minutes until set.
