Oklahoma Nut Candy

Ingredients
- 3 cups granulated sugar
- 1 cup whole milk or evaporated milk for richer flavor
- 1/2 cup unsalted butter
- 1 tsp vanilla extract
- 2 cups chopped pecans or walnuts mix of both is great
- Pinch of salt
Instructions

Prepare the pan:

Line a small baking dish (8×8 or 9×9) with parchment paper or lightly butter the bottom and sides.

Cook the base:

In a medium saucepan, combine sugar, milk, butter, and salt. Cook over medium heat, stirring until butter melts and sugar dissolves.

Boil the mixture:

Bring to a gentle boil and cook until the mixture reaches soft-ball stage (235–240°F) on a candy thermometer. If you don’t have one, drop a little into cold water — it should form a soft, squishable ball.

Remove from heat:

Take the pot off the burner. Stir in vanilla. Let mixture cool 3–5 minutes without touching it.

Beat for texture:

Stir vigorously for 2–3 minutes until the candy thickens slightly and turns creamy.

Add nuts:

Fold in the pecans or walnuts until evenly distributed.

Set the candy:

Pour mixture into the prepared dish and smooth the top. Let cool at room temperature for at least 2 hours, or chill to speed up.

Cut & serve:

Slice into squares or small rectangles. Store in an airtight container.
