Hamburger Steak

My recipe for Hamburger Steak and gravy cooked in a big 12 inch cast iron skillet
1 to 1 1/3 or so pounds ground beef this is 80/20
About 1/8 cup diced green pepper sautéed first
1/2 cup chopped sweet onions sautéed first
1/4 teaspoon nutmeg
1/3 cup canned Italian bread crumbs
1 egg
1 tablespoon Worcestershire sauce
No salt or pepper added so it if you want it, canned bread crumbs have lots of salt in them
First thing I do is sauté the green peppers and sweet onions in some olive oil till a bit tender so they cook in good and are not crisp and crunchy add to the other ingredients
Mix it all up and form up into about 1/4 pound patty’s or larger as you like
Sauté the hamburger steaks in some olive oil till done , remove meat from skillet drain some of the grease from skillet or not depending on how much gravy you want .

With heat off skillet still hot add as much flour as you have grease and stir to make a little roux of it the browned pieces in the skillet are good , then slowly add some Swanson 50 % less sodium or other beef broth to the skillet turn heat to low and use your flat bottom spatula to smush the flour roux down against the skillets bottom getting the lumps out of it as you go around the skillet being careful not to be splashing the gravy , stir the gravy often as it thickens , add more beef broth as needed till the gravy is to your liking add the hamburger steaks into the skillet gravy and let them simmer a bit in the gravy and serve with mashed potatoes or rice with a veggie for a real good meal . The next day any hamburger steaks leftover heated up served on a hamburger roll or bread becomes a tasty gravy burger . Add mushrooms or extras as you want to the gravy or meat mix
