Cucumber, tomato and oriental onion salad. Simple, economical and very good recipe! Parsley, mint, lemon and/or sumac, olive oil, pepper and salt. That’s it!
* Ingredients :
° 500 g of ripe but firm tomatoes
° 4 large tomatoes or 8 small ones
° 500 gm fixed cucumber
° 8 Persian cucumber or 2 English cucumber
° 1/4 red onion
° 4 green onions optional
° 6 tablespoons chopped parsley
° 4 tablespoons chopped fresh mint
° 2 tablespoons of lemon juice, juice of half a large lemon
° 1 teaspoon sumac powder or 1 teaspoon lemon peel
° 2 tablespoons olive oil
° Salt and pepper to taste
* Directions :
Wash cucumbers, tomatoes, onions and herbs.
Cut the vegetables into small pieces. Cut herbs.
Put them in a large bowl.
Add sumac (or lemon peel), salt and pepper.
Pour in lemon juice and olive oil. Mix well.
Strain the salad bowl and keep it for 20 minutes in the refrigerator. This step is not mandatory but does allow for the development of flavors.
