Today we’re escaping under sunny Mexico City to cook a recipe that has invaded social media in recent months: birria tacos! They are composed of beef cooked for a very long time in a spicy sauce then shredded. The tortillas are then dipped in the sauce before frying them in the pan with the meat and cheese: it’s an explosion of flavor!
The original version is cooked with whole Mexican chipotle peppers, in an adobo sauce. Since they are not very easy to find in Switzerland, I will give you equivalents in the tip below the recipe.

+For the meat
• 1 kg. beef pallet
• 1 can of chipotle pepper in adobo sauce
• 1/2 can of crushed tomato
• 1 onion
• 6 cloves of garlic
• 1 cc. ground cumin
• 1 cc. dry oregano
• 1 cinnamon-stick
• 2 leavesbay
• 2 large strips of orange zest
• 6 cl. apple cider vinegar
• Beef broth
For the tacos
• Small corn tortillas
• Grated cheese (preferably cheddar or fake mozzarella)
• cooked and shredded meat
• the meat cooking sauce
• 2 jalapeno peppers
• 1/2 bunch of coriander
• 1 onion
• 2 limes
• 1 avocado
* Preparation steps :
Finely chop the garlic and onion, mix the chillies in sauce evenly, mix the cumin and oregano.
Cut the beef into large pieces then brown them quickly in a large casserole dish with a little neutral oil. Reserve.
Lower the heat under the casserole, add a little fat if necessary, then melt the garlic and onion. Add the cumin, cinnamon and oregano, deglaze with the vinegar.
Return the meat to the casserole dish and add the adobo sauce, crushed tomatoes, enough beef broth to cover the meat, bay leaf and orange zest.
Cover and place in an oven preheated to 140-150 ° C. for 4 to 6 hours. Let cool slightly before removing the meat from the sauce and shredding with a fork.
While cooking, prepare the small salsa: mince the pepper and onion, roughly chop the cilantro and mix them with the juice of 1/2 a lime. Reserve in the fridge.
To assemble the tacos, heat a pan over medium heat, lightly dip the tortillas in the meat sauce, then spread a little cheese and meat over them, then fold them in half and fry them in the pan for them. brown. Serve with the salsa, the remaining meat sauce and the avocado chunks or mash and enjoy! Enjoy your meal’
