Lemon Bisque

Lemon Bisque

This Lemon Bisque is a creamy, comforting soup with a fresh citrus twist that makes it stand out from more traditional cream-based recipes.

I first discovered how well lemon and cream work together when I was searching for something warm and satisfying that still felt light and vibrant. As the lemon zest and juice blended into the rich broth, the bright aroma filled the kitchen and transformed a simple soup into something special.

Since then, this recipe has become a favorite whenever I want a bowl of comfort that doesn’t feel overly rich. Smooth, velvety, and perfectly balanced between creamy and tangy, this bisque offers a refreshing take on classic comfort food. The fresh lemon adds a lively finish that keeps every spoonful tasting bright and inviting.

Ingredients

Category Ingredient Amount Notes
Base Unsalted butter 2 tbsp
Base Olive oil 1 tbsp
Base Onion 1 small Finely chopped
Base Garlic 2 cloves Minced
Base All-purpose flour 2 tbsp
Liquid & Flavor Vegetable or light chicken broth 3 cups
Liquid & Flavor Heavy cream 1 cup
Liquid & Flavor Whole milk ¾ cup
Liquid & Flavor Lemon juice ½ cup Freshly squeezed from 2–3 lemons
Liquid & Flavor Lemon zest 1 tsp Finely grated
Seasoning Salt ¾ tsp Adjust to taste
Seasoning Black pepper ¼ tsp
Seasoning White pepper Pinch Optional
Garnish Fresh parsley 1 tbsp Chopped

Instructions

1. Cook the Aromatics

In a medium saucepan over medium heat, melt the butter together with the olive oil.

Add the chopped onion and cook for 4–5 minutes, stirring occasionally, until softened. Add the minced garlic and cook for about 30 seconds, just until fragrant.

2. Build the Soup Base

Sprinkle the flour over the onion mixture and whisk continuously for 1 minute.

Gradually add the broth while whisking to create a smooth mixture without lumps. Allow the soup to simmer for 5–7 minutes, or until it begins to thicken slightly.

3. Add the Dairy

Stir in the heavy cream and whole milk.

Lower the heat and let the soup simmer gently for about 5 minutes, stirring occasionally.

4. Incorporate the Lemon

Remove the pot from direct heat.

Slowly stir in the fresh lemon juice and lemon zest. Taste the soup and adjust the seasonings as needed.

Helpful Tip: Adding the lemon after cooking helps preserve its bright flavor and reduces the risk of the dairy separating.

5. Blend for a Smooth Finish (Optional)

For an ultra-silky texture, blend the soup using an immersion blender.

Alternatively, carefully transfer the soup to a blender and puree in batches before returning it to the pot.

6. Serve

Ladle the bisque into serving bowls and garnish with chopped parsley and additional lemon zest, if desired.

Serve warm and enjoy its creamy texture and refreshing citrus flavor.
